My review is on the PRAWN OATS, wow rase die, ish ish ish... superb babe... When 1st bite i cakap ngan my hubby, tak mcm oats, tapi mcm nestum, my hubby says, "takkan lah kan, kalau nestum mesti mahal", then i jawab, takpelah bang, lantaklah yg penting sodap.. wakkakakak... terus jgn pandang belakang, ngap ngap teros sampai licin tu oats... Banana Nut Muffins
1/2 Cup Butter, softened
1 Teaspoon Baking powder
1 Cup Sugar *(I change to 1/2 cup sugar and 1/2 cup brown sugar)
1/2 Teaspoon Baking soda
2 Eggs
1 Cup Buttermilk
(or 1 cup milk/1 tsp vinegar)
2 Lg ripe bananas, mashed *(I used 3 bananas)
2 Cup Flour
1 Teaspoon Vanilla
(optional) nuts or chocolate chip for topping
Preheat oven to 180c. Grease 12 muffin pan cups or use paper liners
Beat together butter and sugar at medium speed till light and fluffy. add eggs, 1 at a time, beating well after each addition, beat in bananas till smooth.
Mix together flour, baking powder and soda.
Alternately stir flour mixture and buttermilk into egg mixture till dry ingredients are just moistened.
Stir in vanilla. Do not over mix batter. Batter should remain slightly lumpy. Spoon batter into pan, filling 2/3 full. finish with nut or chocolate chip on top. Bake till lightly golden, 15 to 18 mins.
